I personally don't believe Apple steals Zhizen's technology. And to be fair, Zhizen is only suing Apple's Mandarin version of Siri not the English one. To me, it is likely that the two technologies drive the voice recognition function very differently.
It is up to Apple to prove this.
But, I do feel that Apple will lose this case regardless because China will certainly want a piece of profit that Apple has made, and they have all the right reasons to do so now.
What Apple can do is to pull out Mandarin from Siri for all Chinese iPhones and pay what is due for Zhizen, or just downright buying Zhizen for good.
But for me, I wouldn't care about it because Siri isn't the headlining feature anymore and usage rate is pretty low overall in US, let alone in China.

Zhizen in 2012 took Apple to court.

Apple did NOT reply to Zhizen letter so no negotiation hence the Zhizen suit
Apple 'defence' is that it Apple did not know of the robotic voice assistant called "I robot" which was commercially in use in China since 2004
In 2012 having ignored Zhizen, Apple not knowing of i Robot based in China (I had to look it up on the map) seems odd to me
