Rooting your Android phone enables you to use the superuser, or root, permissions of the operating system. It's necessary if you wish to flash your phone with a 3rd party ROM; and it grants you permissions to alter a lot of hidden settings etc. It does however invalidate any warranty you may have on your phone.
When I had a Galaxy S (i9000), I was always flashing my phone to the latest version of Android before it was officially available. I never had any mishaps doing that, but if you should 'brick' your phone it will be difficult to get it repaired by your supplier.
