They should try with two very thin metal sheet holding displays foldable one on the top of another possibly with a rotating hinge (like in Dell / HP / Surface laptop displays) linking the two sides of the displays together when it is opened, also give options to use one sided (with the other one folded back mode.
This way, battery, speaker, camera can be placed easily.
Thin foldable plastic/ Fiber displays will not survive too long.
At first It is a bit odd, that they do not bend it the other way, display outwards. This way they could mechanically have a round 'fold' and a perfect close of the two parts.
My GUESS is that the elasticity make the display film so prone to scratches that this would be a no go as the outside of the device, or would require a protective pouch for it. And the soft surface might also be the reason why this project have been delayed/postponed so many times...
