I think people overestimate these updates. These updates are not even that big of a deal. Security updates on the other hand are useful. Last "real" update that we had was Marshmallow. After that we got minimal efficiency improvements along with some delicious "bugs". Personally i like to have devices on stock when they are the most optimized.

Samsung Oreo is stable and has more features. It will take 5 years for stock Android to catch up to Samsung Oreo in functionality. Even iOS 11 already has more features than stock Android.
