It's like asking why do all cars have to have 4 wheels to be stable, when there are 3 wheeled cars also. It's why we have only one opposable thumb. The notch doesn't make sense, only as a stepping stone.
There is one straight path in phone design evolution, and all these sidetracking trends will die off.
The optimal design phone is full screen with slim bezels on all sides. No big or small notch. No chin. Those are a necessary step in evolution, but not one that will survive.
Fold-able displays/phones will change this path, and take it further. but till than we need time to see the evolutionary steps.
