The only thing I can imagine is that they were able to provide more value in gaming with Snapdragon 700s and mobile gaming is a big deal where these high value mid-range phones are released.

giving the chip to brands like HMD, LG, Sharp and so on dont exactly make any phones more affordable. These just get more profit as they are not the brands that make good phones for bang of the buck.

Incorrect. Both Sub-6GHz and mmWave are true 5G. The 5G networks based on sub-6GHz can reach multiple Gb/s speed when proper "density" of base stations is reached. As a matter of fact, in some parts of some countries using sub-6Ghz, speed larger than 1Gb/s has already been reached. On paper, it is easier to reach higher speed with mmWave, but this is still a "theoretical" advantage as of today, since mmWave still doesn't have a practical way to deliver that advantage. In terms of actual technological development, mmWave is way way behind sub-6GHz. According to Wilbur Ross (US commerce minister) in his speech delivered in India in February (2020), mmWave is 3 years behind sub-6Ghz. I don't trust Wilbur Ross's judgement. It will take more than 3 years for mmWave to catch up with sub-6Ghz. By that time, the sub-6Ghz deployed in many countries will have reached the proper "density" to deliver 5G speed much higher than 1Gb/s.
5G is not just about speed. It is about many things including:
1) eMBB (enhanced Mobile Broadband);
2) URLLC (Ultra Reliable Low Latency Communications);
3) mMTC (massive Machine Type Communications).
A very basic 5G network, when properly implemented, delivers many advantages a best implemented 4G network can't deliver.
This is thanks to the competition. Just imagine if Mediatek was coming up capable SoCs… QCom would be cruising. Competition is good.

Yes the 7xx series are way more efficient than the sd845, even slightly more than the dimensity 800, but this doesn't change the fact that the mediatek chip set is much more powerful.

The higher drain only comes in during heavy game, taxing the extra 2 A76 cores. Other than that you probably won't see a difference since most day to day task are handled with the A55 cores.
End of the day, whether 4+4 or 2+6, it shouldn't be the key criteria when it comes to significant battery efficient or whether it should be a mid-range or flagship chips.
Those depends largely on the manufacturing process and technology involved, and when you use it for comparison. ie would you compare the so call 835/845 to current generation flagship like the 865, or a midrange like the 765? the SD652, 636 was a 4+4 setup, was it considered a flagship previously? Nope, because they are clocked slower and using a more outdated cortex.
