I think 120 x zoom will be totally useless. Zoom on a mobile phone is only valid up until x 15 at best. I stil think Huawei's P40 Pro Plus' 10 x optical zoom beats any other smartphone..

Top of the line sensors, OIS, waterproofing, and a screen that exceeds 1000 nits in sunlight and I'm sold. Xiaomi have always used screens that fail to reach the brightness of rivals, its probs the biggest gripe I have with xiaomi, don't care about res or refresh rate I just want to be able to read my screen in the summer

A dedicated 12MP macro with a 3x zoom would be so much better than any other solutions.
Deformable mirrors were mainly used in astronomy on scientific telescopes, but now many other products use them, and along with MetaLenses, deformable mirrors are for sure the futur of photography, mainly on smartphones.
A good single omnirole camera with 1 or 2 complementary (depth sensor and many another specialized one, for ultra short exposure for example) would do amazing things !

And yes poco f2 pro have the best macro shot ever with its telephoto macro camera and ice universe also showed that , and for me even if is ultra wide macro like the one on the mi 9 (wich will likely be used on this ultra ) gives much much better results with plenty of details compared to a useless 2mpx macro , and better results can be acheived just by zooming with the main camera especially if the main camera can focus on a near distance
BTW I am not an expert in the camera world so I could be wrong in some statements
And yes using a depth could be cheaper.
I don't know about deformable mirrors but using one single camera module seems promising and it can be the future of smartphone instead of having
Main + 2x telephoto + 5x and maybe also 10× then ultra wide then macro then depth then a camera for portrait
Having one single camera that can do most of these roles is very promising

Also I wouldn't do underwater shots with the bare phone, I would use sealed bags or other accessories that allow the phone to get immersed without issues.
Take the OnePlus 7(t), not the Pro, the one with the notch, well it can easily operate under water without any issues, until it get worn enough or you get one with a defect, which can also happen with any IP68 rated.

Is it because your car have a good crash test ratting that you'll speed on the wrong way on the speedway ?
Same with phones, IP rating IS NOT for saying "you can use it under water", but only to give some proof of a build quality standard allowing it to survive accidental water exposures, if your phone do die while taking underwater shots, you literally have to buy a new one, except if you pay for an extra warranty plan (I don't remember which brands does or does not offer those).
120 zoom. Is this a good stuff or just a bad joke ? I will better prefer a more ultra wide camera or macro 50x than 120 zoom. 10x is good enough and hardware possible not software.

And well, there are downsides in Macro combined with ultrawide, the biggest being the focus distance that can't be as close as on a dedicated Macro, and the impossibility to get optical zoom, in that regard the Poco F2 Pro have the best Macro camera and its quality is amazing, the zoom allow to have even more closeup than what would normally be possible, you can see those amazing results here :

*The best phone would have 1 main sensor optimized for general use and with excellent low light, like the IMX689 or IMX700 or even the Samsung equivalent GN1 :

*Then a wide that have around 16MP or an ultrawide with 19MP (so the pixels per degrees are kept within a 12MP quality standard).
*A telephoto which have 5x or 10x optical zoom and being 16MP to allow using a numerical zoom without too much loss on top of the optical one and try to compensate the little light loss.
*A Macro camera with zoom capabilities (2x or 3x) of around 12MP.
*A 12MP or more depth sensor with a good algorithm to really use it, and also use it for precise object, scene and focus distance calculations.
*And optionally a portrait camera, as a dedicated portrait with a long focal length can make a considerable difference on a face shot :

BUT, a good use of the depth sensor could actually allow to numerically make a good portrait shot out of the main camera by doing the same effect as a long focal length objective.
So either a 6th sensor as a portrait but with a long focal length and some 2x or 3x zoom capabilities, or a good software able to produce a good portrait objective effect shot.
Paradoxally, adding a 6th camera could be the cheapest option, as the software to produce those numeric portrait could be complex and take time, meaning being costly.
Another solution would be to use a complex lens system or replacing lenses by deformable mirrors which have many advantages :

They are smaller and cheaper and will continue that way for a while, using a smart arrangement, we could actually obtain an optic system that basically could do the same as all the other (except the depth sensor of course), by controlling the focus distance and depth of field and the zoom, it could allow a single camera module to obtain wide angle by unzooming, telephoto by zooming, portrait by changing the focal length and macro by closing in a lot the focus point.

But starting price will probably be close too 900-1000€.
If its under 900€ this might be phone of the year.
