No root needed. Just google it on xda forums.
You can disable or uninstall any app (for the current user), but I recommend disabling them, because you'll need to hard reset the phone to install back uninstalled apps.

People do want best processor and best camera out there but some would rather take an ok camera and processor and keep the sd card and headphone jack.
I personally don't care about wireless charge when wired is faster. I'm not fan of fast charging because it degrades the battery faster. Reverse wireless charge is stupid as well. You have a chip that consumes a lot of power and I should that little power that phone has (cough exynos cough) share with some other device? Also 120hz consume a lot of power and it's still not supported by so many apps so that's pointless as well. I'm still using 60hz and it's fine. Dex has its target market but I doubt that majority people will use it. And when it comes to IP rating, if you look some videos on yt you would see that A line phone went through some tests and survived which means the water resistance build is there but to keep the cost down it's not "official".
If Samsung would just add stereo speakers and even bezels to the A line I'd buy it. Until it happens I'll still keep my old phone with all these features that I need.

Quantity are nothing compared to Quality
so IP68, Wireless and Reverse Wireless Charging is bad?
and the fact that it has Stereo Speakers, DeX and 120hz is bad?

As you imagine, this will narrow the search drastically, especially if you are looking for a high-end processor.

I still think that the Fan Edition makes no sense if a variation has the Exynos processor.
