Applying the same logic that you said, people can't even tell that much of a difference between 90Hz and 120Hz, let alone 120Hz and 144Hz. Also, unlike high refresh rate, there are many more contents that are available in 4K than in 120fps. You can NEVER really know how much better 4K is until you actually tried seeing one in personal. People also said 4K is useless, but they were always stunned after seeing the true 4K screens from Sony and then they suddenly see a difference.
Even more so, phones are slowly becoming larger each year, so 4K makes much more sense now than ever before.
About the 4K on the 1 II, it is still TRUE 4K screen because it fills in the minimum standard number pixels for a 4K screen, which is 3840. 5040x2160 would be 4K+, while this is just standard 4K. It's still much higher than anything from other brands today.

OP8 Pro records 4K 21:9, it is 3840 x 1644. What a coincidence.
Samsung does 8K 21:9, it does not have 4320p, it is cropped too.

Most people won't notice the difference except tech people and fanboys.
Also I don't consider the Xperia 1 series 4k, but 1644p.
In 21:9 aspect ratio the resolution should be 5040x2160 to be real 4k.
Z5 Premium and XZ Premium were real 4k tho.
