In daylight they have less shutter lag and less shutter speed than even the 108/48 MP phones. They introduce less motion blur. And their HDR is usually better. Note 20 Ultra has very very long shutter time.

Though a regular Bayer would have issues with motion artefacts and also the MP would be limited to 12MP. Plus multi exposure HDR via the Tetracell though varying exposure CFA colours would also be missing.

Higher ISO = grainy

This is why comparing photos and videos taken with different settings is wrong.
This has huge impact on results.

4 pixels do not become one bigger, they act like one bigger.
Also same colours are always together.
Full resolution is pure software.

Took 3 years to offer sensor capable of 12bit.
Few Exmor have 12bit since 2018.
Samsung always copying.

Or maybe we'll see these features on the Note21

But for some reason the phone doesn't have 4k 120fps recording.

Does this s21 series have 1 Billion colours on display... 10bit?

Still, the small pixels size still means super noisy videos. Even though photos look great. Binning in videos don't give much benefit. But in photos binning are super useful. Just see the camera comparison of supersaf between the Note 20 ultra and the Iphone 12 Pro Max. In photos, Note is less noisy and sharper. But in videos, it is darker and super noisy. The most advanced image sensor in an smartphone right now, in my opinion is the SONY IMX 700y RYYB used in the P40 And Mate 40 series.
