As for the apps, it depends on what you need your phone for (internet, instant messaging, camera, viewing documents, games...) but you can check out a nice thread where people talk about their favorite Symbian apps here: http://forum.dailymobile.net/index.php?topic=101776.0
I'm not sure about "must have" but I think you may want to start with Opera Mini (better than default browser), Belle Extra Buttons (replaces 20 other apps, a lot of functionality added) and maybe CameraPro (for more photo taking options).

Upon upgrading to the Belle software, the FM transmitter... moreYes, some sellers get their phones from countries where FM transmitter is illegal. Then they flash it with Anna (international version), but when you upgrade to Belle it gets upgraded to Belle version from the country where the phone was originally bought (with disabled transmitter). So you probably have to flash it with some other Belle firmware, or custom firmware.

Here, a person called carol gives best advice. Ask him. Or search in google.

I bought a (new) Nokia N8 from China. Upon upgrading to the Belle software, the FM transmitter stopped working. From the phone it gives all the appearance that it's turned on, but it does not actually transmit.

However, it will have very hard time playing or not able to play at all full HD (1080p). So, if you are trying to play such videos, that's a NO. And for the last time, the codecs inside the phone are many (quite allot), but you will not get any others with some other video players. What the phone can hold is pretty much what any other player will play. I never heard of a new player coming with more codecs...for symbian.
