Where is camera review of S20/S20+?? Everyone waiting for that and there are still no real sample pictures around the web. Only few people will buy S20 Ultra.
Xiaomi Redmi K30 Series / Poco X2 are good too, with IMX686, in snail scene they produce one of the best pictures i ever seen and i guess they are good enough for lower (less price) mid-rangers, don't know about Galaxy M31.
The P30 Pro is still better in low light

Decahexa sounded better but yeah, 16 to 1 binning sounded not good in today's standards. I mean Mi Note 10 somewhat destroys the S20 Ultra in terms of details. Because of that, we'll stick to Quad Bayer for a foreseeable future.

As I have suspected S20 Ultra is all about zooming. Up to 30x it looks really great. However, photography-wise I'm very much disappointed, was expecting night and day difference with 9-in-1 pixel binning 2.4 microns vs 1.4 on Note 10. The other issue is S20 Ultra doesn't have "dual pixel" auto focus, making it worse/slower in focusing than regular S20 (and even S10) especially at night.
To be honest, I'll wait for S20/S20+ review (also with new large sensor, well comparing to S9/S10) as given size/weight/price of S20 Ultra I was expecting much more.

It was disgrace to print 100x zoom on the back. I wish Samsung hadnt done it.
Anyway this isn't the final software. So, the quality should be better in the retail versions.

Then read the comparison with the Mi Note 10 Pro that costs half the S20 Ultra.

Cannot test the S20 Ultra's cam yet, only tested all 3 phones at a glance in a store (scrolling, lol).
If GsmArena is correct about the image quality of the S20 Ultra, then it's quite dissapointing considering the price. I examined the comments and pictures. 100x space zoom is a gimmick when 50x does well already. Telephoto is only capable at 5x, if you need 100x, then telephoto needs more zoom than that. The pixel-binning tech is probably only for detailing when zoomed, but it does not hide the fact the S20 Ultra has issues with color reproduction etc. if I'm not mistaken.
I hope GsmArena is not testing the Snapdragon variant. The Exynos models has poor image processing based on my experience with the S7 and S10 both Exynos SoC. I also wonder whether Exynos 990/9830 can even handle 8K at 24fps video recording. Exynos SoC is a serious bottleneck in any Sammy phone, and I'm glad some models switched to SD (ex. A71, A80, A90). Nona-bayer is not too necessary it seems.
But if it turns out that the SD version isn't any better then better try out the regular S20 or S20+. Should both handsets fail as well (unlikely unless it's an Exynos) then iPhone 11 Pro or (coming very soon) Mi 10 Pro and Oppo Reno3 Pro may potentially be better. I've already heard the Mi Note 10, realme X2 Pro, and Oppo Reno 10x zoom does better shots than a S10 Exynos.

Losing in most situations to 2 gen old P30pro and 3 times cheaper mi note 10. Maybe try comparison to new xperia? But that one got great colors and ''anti-fringing'' lens. There is just hard to suggest something if it loses to older and (both) 3x cheaper phones.
Not to forget in some stills is worm like painting done with samsung's processing, but some may enjoy?

Cause if it were actually Quad-Quad Bayer, you'd end up with 3MP images, which would be unacceptable in 2020.
In reality, I suspect it is a Quad-Bayer sensor, which might do 16-1 downsampling in low-light conditions, then upscale the image.
We can't know for certain until it goes official though.
