I think a good case like the Otterbox Defender will ensure very good protection. And like you pointed out, the curved screen is what makes it difficult for good cases to come with inbuilt screen protector.
I saw the Note 8, in rea life. I like the new S-pen, as the point is rubberised and much narrower. However, the big let down was the Samsung notetaking app. They have had years and they still come up with rubbish. You will need to download an alternative note taking app. You could not mix text with handwritten graphic.
I also hate the curved edges. It makes the phone more delicate. You can put a 'tempered' screen protector one it.
This was a 6.3", screen, I assumed it would be too big, but it seemed narrower. The phone was tied to the display, so I could not hold it in my hand.
The display was beautiful and physically the phone is beautiful.
I even managed to get this phone frozen, when it was in the note-taking app. The back button would not respond. (They don't have physical back buttons and menu button)
At Â€1000, it is too expensive. I want a phone, I can abuse a bit. Round edges are a no-no. I don't want a phone, which is delicate as a piece of china. I don't want to keep thinking about my phone.

For some reason, Gsmarena still includes the 256Gb option on the Spec for the Galaxy Note 8. Might be an up coming variant but I doubt the reality.

The S8 Plus is probably a better option for people who want a big screen and can live without a Pen.I personally enjoyed using The Note 2 a few years ago.I used the pen more for surfing to be honest as it made things easier due to my big fingers.So I am tempted to return to The Note, it's just a shame about the high price tag, but that lovely big 6.3 "screen is tempting.

Not my cup of tea too big to comfy fit my pocket. Galaxy Mega 6.3 was huge, this is huge as well with a 6.3 inch screen diagonal.

People cribbing about the fingerprint sensor & rear setup- couple of years ago we didn't have biometric security until Crapple came up with this for its iSheep and now suddenly it's a dealbreaker?? Are you gonna die if you use other modes of phone locking? If someone steals your phone, fingerprint security won't get it back to you...they will hack through it anyway. And let us assume that those buying this monstrous phone have monstrous hands so they will get used to the FP sensor anyway if security is such a concern.
Rant #2- "The black rectangle with the glass looks ugly".... Well I personally think Samsung did a great job keeping it neat and gathering everything in an area that perfectly complements the angular shape of the phone. I feel it looks way better than the S series whose rear design has stayed same for almost 4 generations now and that the back really distinguishes itself from all other phones. It looks high-tech, sophisticated and tells that that this phone means business. That huge rear back would have looked weird if there was a small camera lens...in fact I'll consider this phone over the S8+ because of the unique back!
Rant over. Sort of. Now coming to the overall phone-
1. the size...I mean WTF Samsung- do you expect us to grow chimpanzee hands to handle phones now?! Why on earth does a phone that expected to be in your pocket have to be XXXL
2. I thought this may look like a carbon copy of the S8+ but the angular shape does make it look different when seen in person. However it also takes away the glamour from the S phones....the S8 looks stunning with that Edge display and the Note8 has a very subtle edge that looks nowhere as sexy. This phone is business-like which suits its positioning.
3. I'm in Dubai and there's no 128GB version...yes it's a pricey phone but if I've decided to buy it I may as well spend more and go for a bigger ROM
4. Colours- they got this wrong...jet black is fine and the maple gold has its takers but the gray is terrible. I checked it 2 days ago and its one of the ugliest colours on a device- looks like chalk dust without any shine or effect in light. The Orchid gray on S8 looks much better..the Deepsea blue seems interesting and sporty, but of course they didn't launch it in Dubai! If I buy it I'll have no option than to go for the dipped-in-tar Jet Black and maybe put a skin on the back later.
So now I wait for the V30 which I think will be a great competitor and the Mi Mix2. The Note8 has its uniqueness in terms of practical n powerful stuff though- the stylus (that I feel is nifty for me and I've been wanting to try a Note device for the 1st time), 6GB Ram, and the multi-window that matter to me
