Hi, my watch keeps showing "Unfortunately, (apps name) has stopped." and sometimes it tells me that google play has stopped. What's wrong with it ? Another thing why can't i use the watch gps properly ? It doesn't work most of the time

Yes it can but only with google play music or music that is downloaded on to your phone. You cant use your spotify or apple music accounts as of yet. It connects directly with your bluetooth headphones.

1. Can we make calls and receive calls via smart watch 3 without even touching phone? does it has built in speakers to hear phone ringing or microphone to receive calls?
Answer: It doesn't come with inbuilt speaker, you can attend call if your phone is connected with bluetooth headset and this watch in parallel, without taking the phone out, watch will vibrate during any calls or messages. Just you can swipe in your watch and can hear/speak via bluetooth headset. There is a microphone located in the watch to use voice command features rather than for attending calls(which is not possible without bluetooth headphone).
2. Can I reply to messages by texting through it?
3. Can I see whatsapp messages through it and reply?
4. Can I sync Facebook, Twitter and linkedin to see my news feed and updating status
Answer to questions 2,3 & 4: Can reply to normal messages and whatsapp messages via voice command but not texting. Facebook, Twitter, Linkedin, whatsapp notifications are shown. But not the news feed and status update is also not possible.
5. Can I connect the bluetooth headset and watch with my phone at the same time?
Answer: You can connect your bluetooth headset & watch in parallel with your phone which helps in attending calls as I mentioned earlier. You can connect bluetooth headset only to your watch to hear songs if you downloaded the same from mobile to hear offline. This helps in taking only the headset & watch outside while running, keeping your phone at home. Usable memory to download songs is 2gb out of 4gb.
6. Last but not the least, which one would be the best choice here? Samsung Gear Live or Sony Smart Watch 3?
Answer: I am using Sony Smartwatch for 3 months as of now and I really like it. It has Wifi and NFC which are future proof hardware, so should be better than Samsung gear I believe. Cannot comment on Samsung Gear as I have never seen one.

The icon will stay grey but turn white when connected with Bluetooth audio ect. The watch uses a protocol called Bluetooth smart or low energy that works seamlessly in the background.

I read about it too. I just got a SW3 and it always gave me 1.4 days of battery. A suggestion I found useful was to reboot the watch after it has fully charged. When I rebooted the phone after full charge battery was ok. When I didnt it discharged very quickly. Check it out. Hope it helps. It seems it is a software bug.
